Established in 1879, The Silver Dollar Saloon has over 140 years of memories. Now the owner and operator is bringing his made-from-scratch cuisine beyond the historic walls into surroundings venues such as FREIGHT. Large or small, there is nothing that Eric Johns and his staff can’t handle at the Silver Dollar Saloon.

During the Stay at Home order, Eric got creative and offered family meals with a set meal each night. His menus demonstrated just how diverse and delicious his expertise is. Favorites included egg rolls, dumpling, shepards pie, samosa’s, sushi, kimchi, lasagna, wings, chana masala, Goma Wakame, and hand crafted cured meats that helped feed this town in the first couple months of COVID-19.

When it comes to weddings, Eric brings his past expertise as a highly successful caterer in the Washington DC area before coming to Leadville just 2 years ago. Most of his events begin with a stunning Charcuterie board. A historic medical backboard designed for patients to ride the train from Leadville to Denver is used to display carefully selected cheeses locally and from markets in Denver, in-house cured meats, and pickled and roasted vegetables. Eric will work with each couple to craft a menu that best suits their preferences and budget.

For former executive chef of Yellow Belly in Vail, upscale dining is not new to Eric. Originally from Trinidad and Tobago, Eric says that for him, food is culture. This philosophy permeates throughout the food and atmosphere that Eric and Christine create in their culinary endeavors. Staple dishes such as; tuna tartar, crispy chicken, Treeline salad, cornbread, and crispy potatoes fuse comfort, flavor, and freshness to provide a meal that is both delicious and beautiful. These favorites along with entrees such as local lamb or blackened cod can take your event from great to spectacular.

Like the name suggests, Treeline Kitchen is perched at the edge of a habitat where little else beyond can survive. Consider working with a team that is ready to bring your event to a higher height.
